Pea & Cheese Salad

 

 

1 pkg frozen peas, thawed  (4 cups)

 

1 cup chopped celery

 

2 hard-cooked eggs, chopped

 

½ cup radishes  (optional)  chopped

 

1 jar  (2 oz)  pimentos  (drained)

 

Green pepper to taste, chopped

 

½ cup green onions, chopped

 

Cheddar cheese to taste  (cubed)

 

 

 

Combine and stir into other ingredients:

 

1 cup mayonnaise

 

1 tsp sugar

 

1 tsp salt

 

1 tsp dry mustard

 

 

 

Refrigerate; makes 8 to 10 servings

 

 

 

 

 

2 to 4 servings:

 

1 cup frozen peas, thawed

 

¼ cup chopped celery

 

1 hard-cooked egg, chopped

 

1/8 cup radishes  (optional), chopped

 

½ oz  pimentos

 

¼ cup green pepper, chopped

 

1/8 cup green onions, chopped

 

Cheddar cheese to taste  (cubed)

Refrigerate.

 

Note:  We've made this with many kinds of cheese, Sharp & mild chedar, colby, swiss, edam.
