Kentucky Bourbon Sweet Potatoes This goes fast so you will need to double or triple the recipe 3 Cans (1# 12 oz) Yams (3# 6 Oz total) 1 C sugar 1/'3 C Bourbon 1/2 C butter or margarine 1/2 teaspoon vanilla 2 C miniature marshmallows In a large saucepan, cook yams over medium heat until hot through. Mash yams; add sugar, bourbon, butter & vanilla. Beat till well-blended. Place in a 2 qt. baking dish. Sprinkle marshmallows on top. Bake 30 min. at 350 F uncovered or until marshmallows are golden. Makes 9 servings. I never use the marshmallows. Too sweet for me. I use brown sugar, instead of white. Like the flavor better & not so sweet. Adjust bourbon amount to your taste.
